Ingredients
1 bag of Spanish Rice
1 can beans (I prefer Rosarita's Spicy Jalapeno) 1 bag of Mexican blend cheese 2-3 boneless skinless chicken breast 1 can red enchilada sauce 1 package of large corn tortillas Optional: Sour Cream for garnishment/condiment **MS WORD Tip/Trick**

Directions
1.) Preheat oven to 425 degrees.
2.) Boil chicken until thoroughly cooked on stovetop. 3.) While chicken is boiling, cook rice per directions on bag. Also, put beans in microwave for 2 minutes. 4.) When chicken is done, start shredding or dicing it up to about dime size. 5.) Combine all ingredients in a very large bowl. 6.) Spoon mixture into corn tortillas and wrap them up like a tube (each end should be open) and lay them side by side in pan. Squeeze as many as you can in your baking dish. 7.) Pour entire can over enchiladas. 8.) Sprinkle package of cheese over the top. 9.) Cover with foil and bake for 25 min. 10.) EAT IT! |
