Homemade Mayonnaise
1 c. Oil (your choice - olive, vegetable, avocado, etc)
1 Egg or 2 Egg Yolks
1 tsp. Mustard (your choice - yellow, brown, spicy, etc)
1 tsp. Lemon Juice (fresh or from concentrate)
Salt & Pepper to taste
Onion & Garlic Powder to taste
With a stick blender add all ingredients into a cup shaped container that will fit the blender. Start with the blender at the bottom and slowly draw the blender upwards as the mixture turns creamy. Combine until thoroughly mixed. Use as you would store bought mayonnaise. Will keep refrigerated for up to a week. Delicious!
