Preheat oven at 375 ̊ and bake for 8 minutes
INGREDIENTS:
1 cup firmly packed brown sugar ½ cup softened unsalted butter ½ cup peanut butter 1 egg 1 teaspoon vanilla Side of sugar in a bowl (for the top) |
FLOUR MIXTURE:
1 ½ cup flour ½ teaspoon baking powder ½ teaspoon baking soda ½ teaspoon salt |
Combine flour mixture, mix well, and set to the side. Combine brown sugar, butter and peanut butter and mix on medium speed until well blended. Add egg and vanilla and continue mixing. Reduce speed to low and add flour mixture slowly. Mix well scrapping the side of the bowl with the rubber spatula to help you mix the dough. Shape into 1 inch balls and place on a ungreased cookie sheet. Flatten balls in a criss cross pattern with a fork dipped in the bowl of sugar. Bake for 8 minutes and let cool for two minutes before removing from cookie sheet.
***Optional*** Roll your ball of dough in the sugar bowl before placing it on the cookie sheet. Then flatten balls with fork in a criss cross pattern.

- Substitutions: You can use egg substitute instead of an egg
