4 small boneless chicken breasts
(approximately 1 pound)
1 can condensed cream of chicken soup
(10 3/4 ounces)
1 soup can of water
(1 1/3 cups)
2 cups of Minute Rice
(uncooked)
1 package of Velveeta Cheese
(8 ounces)

Red onions
Celery
Garlic
Canned carrots
Splenda brown sugar

Directions
1. Heat oil in large nonstick skillet on med-high heat. Add chicken; cover. Cook 4 minutes on each side or until cooked through. Remove chicken from skillet.
2. Saute garlic, celery and red onions in smaller skillet. Set aside.
3. Add soup and water to large skillet; stir. Bring to boil.
4. Stir in rice, saute vegetables, and 1 cup of Velveeta cheese; cover. Cook on low heat 5 minutes.
5. Heat canned carrots in small pot with butter and brown sugar.
