Shelly's Zucchini Bread
Ingredients
3 eggs (beaten)
1 cup oil
2 cups sugar
2 tsp. vanilla
2 cups coarsely shredded zucchini
8 ½ oz. can crushed pineapple
3 cups flour
2 tsp baking soda
1 tsp. salt
1 ½ tsp. cinnamon
½ tsp. baking powder
1 cup raisins (optional)
½ cup chopped walnuts (optional)
Directions
Beat together eggs, oil, sugar, and vanilla until thick and foamy. Stir in zucchini and pineapple. Combine together dry ingredients (flour, soda, salt, cinnamon, and baking powder), stir gently into zucchini mixture. Add raisins and walnuts. Pour into greased bread pan or paper lined muffin pan.
Bake at 350° 1 hour for bread pan or 30-35 minutes for muffins. Cool 10 minutes before turning onto cooling rack. Makes 24 muffins or 2 large loaves of bread, cost is approximately
$4.00 per batch.
